Every chef submits a government ID, photos of the kitchen they cook in, and the food-safety permits or certificates required where they operate. Kechen reviews all of it before their dishes can be listed, and we remove listings that fall short. Chefs are independent food providers responsible for meeting their local health requirements — Kechen is not a health authority and does not carry out government inspections.
